I have recently been obsessing with the date, cashew and chia balls. So why not share the easy healthy recipe with you!
This recipe is so easy to take for a small healthy treat throughout the day, and you won’t have to worry about eating bad!
What you will need:
-3 cups of unsalted cashews, roasted
-3 cups of dates
-2 tablespoons of chia seeds
-3/4 cup of sesame seeds, toasted
-1/2 a teaspoon of vanilla extract
-1 tablespoon of honey
Now the fun part, making it!
- Soak the dates in boiling hot water for approximately 10 minutes. Using a strainer, drain off the water and leave the dates to cool.
- Preheat the oven to 140°C. Line a tray with baking paper and spread the cashew evenly on it. Place in the oven to roast for 10-15minutes or until golden! then allow to cool.
- To toast the sesame seeds you can either stir them in a hot pan on the stove top until they are golden or you can spread them out on a baking tray and place them in the oven at 140°C for approximately 10 minutes, then allow to cool.
- Place the cashews in a food processor and pule until crumbly. Refrain from over processing into a powder, you want to keep some chunks.
- Add the dates, honey, vanilla extract and chia seeds and process until well combined,
- Use your hands to form the mixture into balls (it doesn’t hurt to dirty your hands! go ahead). Roll them in the toasted sesame seeds until well coated and place in a container. You can store them in the fridge or freezer. I prefer storing, and eating them straight from the freezer, they’re chewier that way! the balls will soften at room temp!
This recipe should make around 32 balls, so why not share the recipe around give your friends a couple!
